First Course
Choose one of the following:
Cheese duo
Gruyere cheese fritter served with a tomato tamarind sauce paired with yogurt goat cheese mousse and sweet onion marmalade with parmesan pepper chips.
Crab & avocado
A colorful parfait of crab paired with whole grain mustard cream and avocado. Accented with tomato & arugula salad.

Second Course
Choose one of the following:
Caesar salad
Romaine lettuce dressed with a garlic Dijon vinaigrette, tossed with Gruyere cheese and fresh herbs.
Logan salad
Baby greens tossed with a 30-year-old sherry vinaigrette, and sprinkled with crispy garlic chips.

Third Course
Choose one of the following:
Moroccan hen
Roasted Cornish hen marinated in a Moroccan spice blend and preserved meyer lemons. Served with ginger confit of carrot, couscous and a Moroccan olive & butter sauce.
Thai salmon
Seared Bay of Fundy Salmon accompanied by Chef Thad’s complex Thai coconut milk sauce, consisting of lemon grass, shallots, garlic, chilies, and kaffir lime leaves ground by hand. Served with mashed potatoes and pickled mustard greens.
Short ribs
Slowly braised beef short ribs in red wine, veal stock, and aromatics. Served with cheese grits, carrots and red wine braised shallots.
Oven roasted cauliflower
Ponzu glazed cauliflower served atop a bed of black quinoa and paired with a savory pea broth.
